Lava Cake from Spinnaker: A Recipe for Chocolate Rhapsody Anyone Can Enjoy
As soon as one mentions lava cake, mouth of every chocolate lover out there starts watering immediately, and yet you can even prepare this cake at home.
It’s not difficult at all, an experienced chef explained everything to us!
A chocolate rhapsody called lava cake is a favourite dessert of both children and adults, and what makes it so special is the fact that it hides a fascinating melted chocolate inside the sponge. It is served hot, just taken out of the oven, and although the preparation may seem time-consuming, that is not true at all and you will see that for yourself very soon.
Chef of the restaurant Spinnaker in Poreč, Ivan Ergović, shared with us a delicious and easy recipe for lava cake, but with a twist. Namely, there is no gluten, lactose or sugar in our cake, which means that anyone can enjoy this chocolate magic. The recipe is in front of you, so head to the kitchen and follow the instructions!
Ingredients
200 g of chocolate with 85% cocoa
120 g of coconut oil
4 eggs
1 egg yolk
60 g of erythritol (sugar substitute)
30 g of corn starch
30 g of buckwheat flour
60 g of coconut milk
cocoa powder
Preparation
Melt the coconut oil and chocolate. Whisk the eggs, egg yolks and erythritol and blend well until you get a foamy mixture. Add the sifted buckwheat flour and the corn starch to the egg mixture, whisk well by hand, then gradually add the melted chocolate with coconut oil. Coat the baking trays with the coconut oil and sprinkle with the cocoa powder. Pour the finished mixture into the cake moulds and bake at 200 degrees Celsius for 8 to 10 minutes.
