This gourmet Istria experience took place on Poreč’s waterfront which became the epicenter of gastronomic delight last Friday. Ana Roš, the first Slovenian female chef to earn three Michelin stars, took over Spinnaker for an evening.
In 2017, Ana Roš was named the best chef in the world by The World’s 50 Best Restaurants. Furthermore, her restaurant Hiša Franko in Kobarid has recently been awarded its third Michelin star. It’s safe to say that dining at Spinnaker was like stepping into a culinary mosaic of Ana Roš’s current and future projects.

The evening at Spinnaker was a journey through the culinary world of this celebrated chef. The ten-course menu at Spinnaker gourmet stage showcased Ana Roš’s culinary artistry, using the finest ingredients and creative techniques to offer a memorable dining experience.
It began with the first bite – goat cheese focaccia from Pekarna Ana. Furthermore, it was followed by bruschetta with oyster mayonnaise, anchovies, tomato and basil from JAZ by Ana Roš.

The gourmet experience continued with classics from Hiša Franko. That is, with corn beignet with fermented cottage cheese, smoked trout roe and wild chives. The guests then enjoyed a potato cooked in summer hay crust paired with cultured cream with caviar.

Moreover, a true delight were hand-cut tagliolini and mountain rabbit paired with cocoa nibs and truffles.

The next course offered a two-days aged trout cooked on Hibachi BBQ, along with brown butter fish sauce and horseradish.

One of the most interesting courses offered roebuck paired with oysters, kiwi and beetroot. Along with greens from mountain farm, it was an extreme delight of tastes. The end of the menu treated the guests with fig leaf granita and a dessert with a special name – „Homage to autumn“.
